Coconut, Mango and Orange

Calories per Popsicle: 122
4 cups diced fresh Mango (about 3 large Mango's)
2 cups of Coconut milk (1 can)
1 cup fresh orange juice
4 Tablespoons of sugar
1 tablespoon fresh lemon juice
- Place all the above ingredients in the bowl of an Food processor with a metal blade, and puree to the consistency of a smoothie. This should yield about 4 1/2 cups of puree.
- Divide the mixture between 12 Popsicle molds. If you have any puree left, set aside for later use.
- Place in the freezer for about 15 to 20 minutes, until the mixture starts to firm up; than insert a wooden Popsicle stick in the middle of each mold. You can find these molds and wooden sticks at any 99 cent or craft store.
Summer Blueberry

Calories per serving: 154 with regular sugar

2 cups (1 pint) fresh blueberries
1/2 cup sugar (or sugar substitute- like Splendor)
1 cups water
1 tablespoon fresh lemon juice.
-In a medium size pot add the blueberries, sugar and water; bring to a boil, and cook until the blueberries start to pop.
-Take off the heat, and transfer the berries to a bowl, and let cool to room temperature. Add the lemon juice.
-Divide the mixture among four molds. Again, there will be some left; set aside for future use.
Coconut, Mango and Blueberry

Calories: 125
-Using the leftover mango and blueberry puree divide the Mango puree, topped with the Blueberry puree, as shown in the picture above, place in the freezer until firm enough to insert a wooden stick.
-If you don't want to might more popsicles, these puree's make delicious sauces for Ice cream or Yogurt.
