Baked Chicken Cordon Bleu
With Dijon Cream Sauce 
Yield: 4 servings
 

 
Ingredients

4 Skinless, and boneless Chicken breasts (about 1 lb)
4 Slices of  Deli Ham ( I use Prosciutto )
4 slices of Swiss Cheese
1/2 cup flour
1/2 tsp of salt
1/8 tsp of pepper
1 to 2 Whole Eggs
1 tablespoon of water
1/2 cup panko bread crumbs
1/4 cup Parmesan cheese 

 Prep the chicken

-Slice chicken in half to make them thinner. ( You can also purchase thin sliced chicken breasts.
-Place them between two sheets of parchment, or wax paper. (You can also use a large zip lock bag)
-Pound with a meat tenderizer (or if you don't have a meat tenderizer, you can you a rolling pin)
-Pound until they are about 1/4-inch thinness, and flat.
-Mix flour with salt and pepper in one dish.
-Whisk together egg and water in second bowl
-Mix together the bread crumbs and cheese in a third dish

Method:

-Preheat oven to 450F degrees. Spray a large non-stick baking sheet with cooking spray
- For each chicken breast; Place a slice of ham on top of the chicken, then then the Swiss cheese and carefully roll them up; you can use a toothpick if need to secure them.
-Dip the prepared chicken breast into the flour mixture, then egg wash, then into the breadcrumbs.
-Place the chicken onto the baking sheet seam side-down
-Bake about 25 minutes, or until the breast has reached 165F degrees.  cheese will start to ooze out

Serve with Dijon Sauce

 

Dijon Cream Sauce:

1 1/2 tablespoon butter
1 1/2 tablespoon flour
1 1/4 cup of milk
2 tablespoons of Dijon mustard
3 Tablespoons of Parmesan cheese, finely grated 
1 teaspoon thyme leave (optional)
Salt and Pepper to taste

Method for Sauce

-Melt butter in a small saucepan; add flour and cook for 1 1/2 minutes.-
-Add half the milk and whisk until the flour mixture is blended in.
-Add remaining milk, mustard and cheese. Cook for 3 minutes, whisking constantly, until thickened; it will thicken as it cools.
-Remove from heat, stir in thyme leaves and add salt and pepper to taste.

Chef Notes:
You can pre-roll everything before dinner and then just pop it into the oven when its dinner times

You can also bake them, let them cool, and wrap in plastic wrap and store in a freezer bag, and freeze them for later.
You can bake them in a pre-heated 375F degree oven right from the freezer.

You can can also freeze  and store them unbaked- then bake them right from the freezer in a 375F degree oven for about 35 minutes.
