Chocolate Chocolate Chip Banana and
Apple Muffins
Yield: 12 to 14 Muffins
Calories: 170.5

Ingredients:
3 1/2 cups ripe medium bananas, mashed
1/4 cup unsweetened apple sauce
1 1/4 cup unbleached all purpose flour
1/4 cup unsweetened cocoa powder
3/4 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons of butter, softened
1/3 cup sugar
2 large egg whites
1/2 teaspoons vanilla extract
1/2 cup chocolate chips
Method:
 -Preheat over to 325 degrees F
-In a large mixing bowl cream the sugar and butter with an electric mixer. Add egg whites, bananas, apple sauce, vanilla and beat at medium speed until thick.
-In another bowl combine flour, cocoa powder, baking soda, and salt and mix with a wire whisk.
-Add the flour mixture to the banana mixture, then blend at low speed until combined. Fold in the chocolate chips.
-Divide the batter between 12 or 14 muffin tins, lined with paper liners.
-Bake for 30 minutes, or until a toothpick comes out clean.

These can be stored in the refrigerator, also they freeze well.
