Chicken Chili
(Simple Recipe)
Yield: 8 servings.

Ingredients:
1 Tablespoon olive oil
1 pound ground Chicken (or diced boneless, skinless chicken breasts or tenders)
1 medium onion chopped
1 red bell pepper- diced
1 cup of chicken stock
1 can of black beans (drained and rinsed)
1 cup frozen or fresh corn.
1 can (14oz) Fire Roasted Diced Tomatoes- or regular diced tomatoes'
1/4 cup of Tomato Paste
1 cup applesauce
1 tablespoon Chili powder
1 teaspoons ground cumin
1 teaspoons oregano
1 teaspoon thyme
1 teaspoon garlic powder
1/2 teaspoon ground cayenne
Method:
-Heat olive oil, in a large saucepan; add ground or diced chicken, and saute until lite brown.
-Add the chopped onion and diced red pepper, and saute until vegetables are soft.
-Add the spices, and saute for about 1 minute
-Add, the rest of the ingredients, bring to a boil; and than lower heat to a simmer, cover and simmer the chili for about 40 minutes. Checking it after about 30 minutes, giving it a good stir.
Serve with rice, (white or brown), sour cream .
