One Pot
Teriyaki Chicken, Mango and
Summer Squash Noddles
 
Serves 3

Ingredients: 

2 medium boneless, skinless chicken breasts; cut into strips or chunks ( for this type dish, I like to use Chicken tenders)
2 tablespoons olive oil
Salt and Pepper to taste
1/2 cup fresh Mango chunks ( you can also use Pineapple)
4-5 medium summer squash ( you can also use Zucchini or a combination of both)- cut into noddles using a spiralizer.
 Chef's Note:
( there are many different spiralizers on the market- a good kitchen supply store- I bough mine on Amazon.


Sauce:
1/3 cup water 
1/3 cup low-sodium soy sauce
4 tablespoons honey
4 tablespoons rice wine vinegar
2 cloves garlic, minced
1/2 teaspoon grated fresh ginger
2 tablespoons cornstarch
Salt, Pepper and Red Chili flakes to taste.

Garnish: (Optional)
Thinly sliced green onions
Sesame Seed.

-In a plastic container or a jar with a lid, add all the sauce ingredients-cover it and shake vigorously; set aside
-In a large bowl, combine the chicken strips with salt, pepper and drizzle 2-3 tablespoons of sauce over the chicken, cover and allow to marinate for 30 minutes.
-Heat 1 tablespoon of olive oil in a large skillet/Wok/saute pan on medium heat. Add the chicken and cook until; brown, about 4-5 minutes.-add the mango chunks and cook for about another 2 minutes.
-Pour the remaining sauce in the pan and turn the heat to high; Allow sauce to bubble and thicken while stirring; add more water if sauce is too thick. Season with salt and pepper, and the red pepper flakes,
-Add the noodles to the pan, and using a tong toss and coat them with the sauce.- Cook 1-2 minutes, just until the noddles are tender- be careful note to overcook.
-Divide the chicken and noddles between three plates; and garnish with green onion and sesame seeds.

Chef's Note:
This dish can be divided into plastic storage containers, and stored in the fridge for up to four days- you can also freeze them. 

You can also use regular Asian style noddles for this dish - such as Soba etc
