Coconut and Dark Chocolate Popsicle's
with Candied Ginger and Citriburst Pearls (Lime Fingers)

Finger Limes
(Citrus Caviar)



Finger limes, also called citrus caviar, is a very special citrus fruit. The finger lime has the size and shape of a finger. The outside of this fruit can vary in colour, but it usually is (dark) green to brown red. It has an intense Lime flavor.
Also, sometimes, they are called Citriburst Pearls. I bought the finger limes at Amazon- a bit expensive, but I was dying to check them out.

Finger limes  comes from Queensland and New South Wales, Australia. 


Ingredients for Popsicle's

1 can (13.6 oz) full fat coconut milk
3 tablespoons Maple Syrup or more, if you like it a bit more sweeter.
6 teaspoons of Citriburst pearls (6 finger limes)

-In a medium size measuring cup with a spout, combine coconut milk, maple syrup and 2 teaspoons of finger lime pearls and stir until well combined. Pour into Popsicle molds and freeze for 4 hours or overnight.




For Chocolate Shell:

2/3 cup dark chocolate
2 tablespoons coconut oil
1/4 copped candied ginger
The remaining lime pearls.

-Combine chocolate and coconut oil in a glass measuring cup and microwave 30 seconds, or every 10 seconds, until the chocolate is melted and smooth. 
-Prepare a baking sheet with parchment paper. Remove the Popsicle's from their mold, one by one; dip into the melted chocolate and then garnish with candied ginger, and some finger lime pearls.
-Once garnished lay each Popsicle on a baking sheet with parchment paper and return to the freezer, until totally frozen, and wrap each in plastic wrap and store in the freezer until you are ready to enjoy them.
