French-Canadian Yellow
Split Pea Soup
 
Serves 8 
 


Every February I host a small French-Canadian Yellow Split Pea 
Soup party
Every Year using the left over Ham Bone from my annual Christmas Party
and make this soup
Its a simple dinner party, Salad, Pea Soup, Dark Bread and Beer
However
For the last three years, I have combine this Soup Party with 
Celebrating Valentine Day with Good Friends

Ingredients:

1 pound dry yellow split peas (washed and picked over)
1 meaty (leftover) ham bone ( if you don't have a ham bone, you can use 2 to 3 ham hocks)
1 cup chopped onions
8 cups of water
1/2 teaspoons and 1/4 teaspoon of black pepper
1 teaspoons of chicken bouillon
1 cup sliced celery
1 cup sliced carrots
2 slices of bacon (fried crisp and broken into pieces)
1/2 cup half and half
2 tablespoons butter


Method:

-In a large soup pot or kettle, add 8 cups of water, than add the ham bone, chopped onion and the bouillon and the salt and pepper.  Give it a good stir



-Bring it to a boil; cover and reduce heat- simmer for 1 1/2 hours, stirring it often.
-Than remove the ham bone, and let it cool, than remove as much ham you can and dice it; set it aside.
-Return meat to the soup,than add the carrots and celery. Simmer for about 30 minutes
-Stir in the bacon, cream and butter into the soup. 


Season the soup with salt and pepper to taste.  This soup freezers very well. Make it ahead of time and freeze two cup portions.
