Cabbage Soup

Yield:8 cups




Chef's Note: Can help you lose weight - replace a meal with it, it is hardy and filling-also a Detox

Ingredients 

2 tablespoons of olive oil
1 1/2 pounds of fresh cabbage chopped
3 stalks celery, diced
1 large yellow onion, diced
4-5 cloves of garlic minced
2 large carrots peeled and chopped
l large Red (or Green) bell pepper, diced
1 large zucchini (cut in half moon shape)
5 -6 cups of vegetable broth- ( I used  the vegetable"Better than Bouillon" 
1 14.5 ounce  diced tomatoes
1 tablespoon of Italian seasonings ( in the Salad dressing aisle )
1/2 teaspoon of black pepper
1/2 teaspoon of salt.

Method:

-Heat two tablespoons of olive oil, on a large stock pot; add the onions, celery and bell peppers; cook until translucent (also known as sweating the vegetables)
-Now stir in the garlic, and sauté for about one minute.
-Add the vegetable broth, cabbage and carrots, stir to mix
-Add the dice tomato's with their juice and the zucchini 
-Add the Italian seasoning, salt and black pepper; bring to a boil, that lower the heat, and simmer covered  for about 15 minutes
