Pollo Toscano con Alfredo
and Fettuccine

Tuscan Chicken with Alfredo Sauce
and Fettuccine

Serves 6



This recipe is cooked in a Crock Pot ( 7 quart)

Ingredients:

2 tablespoon unsalted butter
6 Boneless, skinless chicken breasts
3/4 cup dried tomato's cut into the strips
1/2 cup Parmesan Cheese, grated
1 1/2 teaspoon Italian Seasoning
3 cups of baby spinach
2 Jars of a quality Alfredo Sauce

Method:

-Add the butter to a large skillet over medium heat.  
-Add the  chicken breasts, depending on the size of your skillet, in batches; cook each side about 3-5 minutes until browned, turning only once.
-Add the browned breasts to your Crock Pot
-Meanwhile; pour the two jars of Alfredo sauce into a medium bowl; add the dried tomato strips, the parmesan cheese and the Italian seasoning; mix well. than pour over the chicken breasts in the Crock Pot.
-Cover the pot and cook on LOW, and cook for 4 hours. Add the baby spinach and cook another five minutes. 

Served over fettuccine, or a pasta of your choice.
