Spinach Stuffed
Chicken Breasts
Yield: 4 servings
Ingredients:
4 chicken breasts ( boneless and skinless) about 2 pound
4 ounce baby spinach (roughly chopped)
4 ounce cream cheese ( soft at room temperature)
2 ounce of Feta Cheese, crumbled
2 ounce of mozzarella cheese (chopped fine or shredded)
2 tablespoons olive oil
Seasoning ingredients:
2 teaspoons paprika
1 teaspoon cumin powder
1 teaspoon salt
1/2 teaspoon chili powder
-Mix all the seasoning ingredients together and set aside.
-In a mixing bowl, add the chopped spinach, the softened cream cheese, feta and the mozzarella. ----Using your hands massage the cheeses and spinach until well combined, it should look like a thick paste-
Using a sharp knife, cut a deep pockets into each breast- make sure you don't cut all the way through.
-Divide the spinach mixture into four equals parts and spoon it into the chicken pockets; using toothpicks to secure the stuffing inside.
-Generously season the chicken with the spice mixture and brush with olive oil on both sides
-Bake the chicken in a preheated oven at 400 degrees for 25-30 minuets, depending on how large the breasts are. The internal temperature of the chicken breast will be 165-170 degrees F when it is cooked through.
