Ingredients
5 ounce of Baby Spinach
1 Apple ( I use Granny Smith), core, peeled and sliced thin
1/4 cup sliced red onion
1/3 cup Feta Cheese, crumbled
Toasted Almonds (optional)
Vinaigrette
1/3 cup extra virgin Olive Oil
3 Tablespoons of Red Wine Vinegar
2 teaspoons of Dijon Mustard
Kosher Sale and Freshly ground Black Pepper
Method
-In a small bowl or mason jar, add all the vinaigrette ingredients, whisk or shake to combine.
-In a nice salad bowl, add the spinach, onion and 3/4 of the sliced apples; pour the vinaigrette and toss the salad well, divide onto the salad plates, and top with the reserved apple slices and toasted almonds.
