As promised here is my recipe for Corn Beef & Cabbage.
This truly a very simple recipe



Corn Beef & Cabbage 





Ingredients:
3 to 4 pound corn beef brisket with spice pack
8 Small red potatoes, washed and cut in half
1/2 pound baby carrots
1 small head of cabbage

-Preheat heat the oven to 300 degrees.

-Place the corn beef brisket, fat side up in a dutch oven, and fill it with water to about 6 inches above the beef. Sprinkle the spices over the beef.  Bring to a boil, and boil the corn beef for 30 minutes.

-Take off the heat and cover the pot tightly, and place in the oven for 3 to 3 1/2 hours. Test with a fork if the beef is tender- remove it to a platter and cover it with foil.

-Bring the cooking liquid to a boil, add the carrots, potatoes and cabbage, and simmer for about 30 minutes until everything is tender.

-Serve with freshly made Irish Soda Bread, and a nice bold beer.
