What to do with the leftover Corn Beef and Vegetables?

Try Chef Ed's Version of Corn Beef Hash. 

Yield 2 servings

2 Tablespoons of butter (plus more if needed)
1 1/2 cups of small diced onion
2 cups of small diced leftover Corn Beef (lean)
2 cups of small diced leftover potatoes 
1 cup of small diced carrots
Pinch of Crushed Red Pepper (optional)
Salt and Black Pepper

Poached or Fried Large Eggs


Melt two tablespoons of butter in a heavy bottom or cast iron frying pan, add onions, and saute until soft:


Raise heat to medium heat, add the potatoes, corn beef, and carrots, sprinkle with red pepper flakes, and season with salt and pepper.  Spread the beef and vegetables evenly in the pan, than press down with a spatula, and cook until it starts to turn a golden brown. With a wooden spoon turn sections over to brown the other side


Take off heat, and divide between two plates, poach or fry eggs, top the hash with them, and served with toasted Irish Soda Bread with Caraway Seeds. (Recipes is on this Blog)
