Cajun Shrimp Boil

Ingredients:
1 lb raw jumbo shrimp, peeled and deveined
1/2 pound Andouille Sausage or Chorizo, sliced
1 ears corn peeled and quartered
1/2 pound baby red potatoes (or white) cut into 3/4 inch chunks
3/4 to 1 Tablespoons Cajun Seasoning
1 tablespoons olive oil
Method: Oven
-Preheat oven to 425 degrees.
-Bring a medium saucepan with water to a boil; add the potato chunks and corn pieces and par-boil for 5-7 minutes
-On a work surface, cut 2 pieces of heavy duty foil, approximately 12" inch square
-In a large bowl, add the shrimp, sausage, and the par-cooked corn and potatoes ; sprinkle Cajun seasoning on top and drizzle olive oil over the ingredients and using your hands, toss all the ingredients to evenly coat with seasonings.
-Divide the shrimp, sausage, corn & potatoes in the middle of each foil square
-Fold up the edges of each piece of foil into a packet, sealing the edges tightly .
-Place the packets on a sheet pan and place in the oven. Cook for 15 minutes until the shrimp and potatoes are tender.
Optional- Garnishes
1/2 lemon freshly squeezed
Salt and pepper to taste
1/2 tablespoon fresh parsley, minced
3 tablespoons of melted butter, for dipping the corn and potatoes.
