Mediterranean Chicken
(Slow Cooker)

Servings: 4


Ingredients:

4 medium-large boneless skinless Chicken Breasts (or 4-6 boneless, skinless chicken thighs)
Salt & Pepper to taste
1 Tablespoon  Italian Seasoning  (Note: 3 teaspoons equals 1 Tablespoon)
Juice of 1 medium lemons (about 2 Tablespoons)
1 tablespoon minced garlic
1 medium onion, chopped
1 cup Kalamata olives (pitted)
1 cup roughly chopped Roasted Red Peppers
2 tablespoons capers (drain, but not rinsed)
fresh thyme or basil for garnish (optional)

Method:

-Grease your crock pot insert with Non-Stick Olive Oil spray.
-Season chicken with salt and black pepper to taste.
-Heat a large skillet with a little olive oil, and brown the chicken 1-2 minutes on each side. 
-Transfer the chicken to the crock pot
-Add the, olives, red peppers, and capers to slow cooker (tuck them around the sides so they aren't covering the chicken)
-Whisk together the Italian Seasoning, lemon juice, land minced garlic and pour over the chicken.
-Cover the cooker and cook on low 4 hours, or on high 2 hours.
-Garnish with fresh thyme or oregano, or both and serve. 


Chefs Note:
Sides suggestions: It works well with pasta (your choice) or rice, and even zucchini noddles. Just toss with a little butter, and parmesan cheese.- you can pour a little of the chicken cooking liquid.
